First, if you feel like it, put some oil (any kind), butter, ghee or something like Smart Balance in a pot. Slowly fry some onions, garlic, shallots, leeks and or ginger root until the onions etc. are clear or browning. (You may also add flour to the oil and slowly brown it as in a good ol' louisianan roux) Now you may add mushroms, carrots, celery. peppers and on and on to this slowly cooking or browning everything. Once you are satisfied add water or vegetable broth and bring to the simmer. To this add potatoes, squash, yams, turnips, beets, or any roots you got around the house. Now in the order of which takes the longest to cook add whatever vegetables you like. Peas, beans, dahl, lentils, barley, grains are also friendly in the pot. And also throw in any leafy greens you enjoy and simmer away (DO NOT BOIL). Parsley, Cilantro, and any of a world of herbs go in, in any amount you can handle. You can also add fruit like apples, mangos, tomatoes and on and on, be brave. As for spices the sky is the limit and world of adventure explore the planet. You may oven roast the vegies in the oven first for another twist. To this bubbling cauldron of love you can add miso, tamari, vegetarian oyster sauce, any curry paste, Maggi Seasoning, wine, coconut milk, apple or white grape juice and on and on. As Julia Child said "The ingredients never read the recipe" so create. Take half the soup or more and put it in a blender and whiz away. You can add a little peanut, almond or any nut butter you like. Return this to the soup and simmer a few minutes. Now you may or may not add milk, cream, cheese, yogurt or almond milk, heat but do not boil place it in a bowl and top with croutons, parsley.sprouts, cheese, sliced nuts, coconut or whatever you like. And behold you have Garbage Soup.
